Albert's Super Kitchen is excited to host a super fun cooking demo featuring healthy and delicious southern cuisine.
This month's Guest Chef is Rosa Gonzalez, Ph.D. and author of Mama Rosa's Kitchen: Plant Powered Cuban Vol. I.
Generous samples of the food will be provided (you're having lunch on us!).
Roasted Red Pepper Hummus

“Longevity legumes” such as chickpeas have been used in traditional medicine to treat high blood pressure and diabetes. They contain many nutrients, antioxidants, phytochemicals, and phytates. Including chickpeas in one’s diet may reduce risk of the type of prediabetes known as metabolic syndrome. Chickpeas are anti-inflammatory and contain an abundance of non-heme iron—the safest form of iron.
Pulled Pork (Jackfruit) Sandwich

Nutrition Info: Jackfruit contains a high amount of nutrients like vitamin, minerals, electrolytes, phytonutrients, carbohydrate, fiber, fat, and protein. Jackfruit is a good source of calories but contains no cholesterol or saturated fats.
Creamy Banana Pudding

Bananas are a good source of fiber, which improves the quality of bowel movements, feeds our beneficial gut bacteria and facilitates the absorbance of some dietary components, including calcium. The vitamin B6 found in bananas may support eye health and alleviate dry eye symptoms. These widely consumed fruits are also rich in serotonin, the neurotransmitter responsible for regulating mood, and may prove capable of modulating or preventing depression symptoms. A study performed in vitro showed liver cancer cells growth rate decreasing 40% after exposure to bananas. However, increased intake of bananas was not associated with a decreased risk of developing breast cancer in a study of African American women. Long-term, regular consumption of bananas does, however, appear to help stabilize blood sugar levels.
